Roasted Tomato Bruschetta with Burrata Recipe

- 1 cup (200g) Cherry Tomatoes
- Maldon Salt
- Olive Oil
- Fresh or Dried Thyme
- 1 Burrata
- Balsamic Glaze

Instructions
- Prepare the Ingredients:
- Preheat the oven to 180°C (350°F).
- Place the cherry tomatoes in an oven dish.
- Cut the garlic head in half horizontally and place it alongside the tomatoes in the dish.
- Drizzle the tomatoes and garlic with olive oil and sprinkle with Maldon salt.
- Roast the Tomatoes and Garlic:
- Bake in the preheated oven for 20 minutes, until the tomatoes are blistered and the garlic is soft.
- Prepare the Bread:
- While the tomatoes and garlic are roasting, slice the bread.
- Drizzle the bread slices with olive oil.
- Toast the bread slices on a grill pan or in the oven until golden and crisp.
- Create the Tomato and Garlic Spread:
- Once the tomatoes and garlic are ready, remove them from the oven.
- Squeeze the softened garlic out of its skins and mash it together with the roasted tomatoes using a fork to create a paste-like texture.
- Assemble the Bruschetta:
- Spread the roasted tomato and garlic mixture onto the toasted bread slices.
- Place a burrata on top of bruschetta.
- Drizzle with a little more olive oil and balsamic glaze.
- Garnish with fresh thyme or other fresh herbs.
- Serve:
- Serve the roasted tomato bruschetta with burrata immediately, while the bread is still warm and crisp.
